Mint Rice Recipe aka Pudina Rice

Mint Rice is a delicious and fragrant Indian dish made with rice and mint leaves. “Pudina” is the Hindi word for mint leaves. Mint leaves are used widely over Indian cuisine to prepare chutneys, curries, biryanis and many rice recipes

This is also a perfect lunch box and meal prep recipe which can be prepared in a jiffy. You can also add vegetables like potatoes, peas, carrot, beans and cauliflower to make it more wholesome.

Ingredients for the Mint Paste

Coriander Leaves - 1 Tablespoons (optional)

Mint Leaves - 8-10 Tablespoons

Ginger - 1 Inch

Garlic - 3 cloves

Green Chilies - 2-3

Ingredients for the overall rice

Oil - 2 Teaspoons

Mustard Seeds - 1 Teaspoon

Urad Dal or Black Split Gram - 1 Teaspoon

Cashews - 2-3 Tablespoons

Garlic - 4-5 cloves

Green Chili - 1

Onion - 1 Small

Mint Paste - 5 Tablespoons

Cooked Rice - 250-300 Grams

Salt - 1 and Half Tsps or as per taste

Juice of half a lime - Optional

Recipe

Step 1 : Prepare the Mint Paste

To the blender, add coriander leaves, mint leaves, ginger, garlic, chilies, water and blend.

You can prepare this in a big batch and store upto 7-10 days in the refrigerator

Step 2 : Prepare the tempering

  • Heat a pan, and add oil, followed by mustard seeds and urad dal - once they start to crackle, add cashews and cook till they are golden

  • Then add finely chopped garlic and cook for 2 mins.

  • Add slit green chilies and finely chopped onion and cook just for a minute. Remember we are not going to cook the onion for a longer time just for 2-3 mins so they have some crunch and it will add such great flavor to the rice

  • Add the Mint Chutney or paste to the pan and cook for 3-4 minutes over medium heat and add the cooked rice followed by salt.

  • Mix everything well and top it up with some lime juice but it’s optional

  • Also always toss the rice never overmix it

This is a perfect recipe when you have leftover rice
