Vegan Condensed Milk & Coconut Laddu

Vegan Coconut Ladoo or Nariyal ladoo is a round or ball shaped Indian sweet or fudge prepared from fresh or desiccated coconut powder, milk and sugar. This famous Indian sweet is usually prepared during festival seasons. We have veganized this yummy Indian sweet by using Vegan condensed milk.

Vegan Condensed Milk Recipe

Ingredients

Soy Milk - 1.5 Litres

Sugar - 250 Grams

  • In a pan, heat 1.5 litres of Soy milk.

  • Let it cook over low or medium heat till it is reduced to half, make sure to stir it in between so it doesn’t stick to the bottom of the pan.

  • Once it’s reduced to half the amount we had initially taken, add 250 grams of sugar, and mix.

  • Vegan condensed milk can be prepared in so many different ways and some of them are healthy as well

  • Let it simmer further till it becomes 1/3rd, remember that it will get thicker after it cools down

  • The remaining milk after cooking should have a similar consistency of maply or agave syrup

This is definitely a time consuming process, but totally worth it. So many recipes can be prepared using this Vegan condensed milk

  • Transfer it to a fresh bowl, and let it cool down before refrigerating it

Vegan Condensed Milk - Coconut Ladoos

Ingredients

Coconut Oil - 2 Tablespoons

Desiccated Coconut Powder - 150 Grams

Vegan condensed Milk - 50-60 ml

Step 1 : Make the batter or dough

  • Heat a pan and add 2 tablespoons of coconut oil, followed by 150 grams of desiccated coconut powder.

  • Stir it and cook over low heat for 4-5 minutes till it becomes slightly fragrant. You can also use freshly grated coconut for this recipe

  • After 5 mins add around 50-60 ml of vegan condensed milk. Mix it well with the desiccated coconut powder.

  • Continue to cook it over low heat by continuously stirring the mixture. Cook it for another 7-8 minutes.

  • Condensed milk makes it so much easier to prepare these, you can even prepare the condensed milk using jaggery.

Note - If you don’t have the condensed milk, use milk and sugar separately in the recipe.

  • Once the all the excess moisture is absorbed by the desiccated coconut, switch off the heat and let it rest

Step 2 : Prepare the Ladoos

  • Once the mixture cools down a little, start shaping the Ladoos.

  • Apply some oil to palms so it doesn’t stick.

  • Bind the mixture well together and give them the perfect round shape

  • At last roll them in the dry desiccated coconut which is optional but definitely that extra important step to take them from good to great

  • Repeat the same with the remaining ones and the Coconut Ladoos are ready

Traditionally the coconut ladoos are prepared using fresh coconut and jaggery. The earliest form of coconut ladoos was called Nariyal Nakru and it dates back to the time

of the Chola Empire, when it was a sweet that was packed for travelers and warriors as a symbol of good luck for their expeditions.

These Coconut Ladoos are so soft and juicy and will melt in your mouth.
