Today we are going to make Cabbage Rolls. These stuffed Vegan Cabbage Rolls are made with tender leaves of Cabbage wrapped around a hearty mixture of black beans, mushrooms and cherry tomatoes. It is an easy, healthy and filling recipe which can be served as a snack or even lunch or dinner.
Start by heating water in a pan, then carefully add the cabbage leaves one by one. I am using a wide pan to fit the cabbage leaves properly. Cover the pan and let them cook for 4 to 5 minutes over medium heat and after 5 minutes remove the cover and check whether the leaves have softened.
If they are not soft, cover the pan again and let them cook for 2 to 3 minutes
Once soft, take them out and place them in a fresh plate.
Now we'll start with the preparation of the stuffing
To a pan add one tablespoon of oil and then add freshly chopped garlic cloves(about 1 tablespoon) then cook it for two minutes over medium heat. Once little golden brown, we will go ahead and add one medium chopped onion.
Now mix everything together, we are choosing mushroom and black bean based stuffing, you can select any stuffing of your choice.
After the onion is cooked for 2 to 3 minutes, add 3 to 4 tablespoons of cherry tomatoes, now mix everything together, cook them for 3 to 4 minutes and I love the flavors they bring to this recipe
After few minutes, add 100 to 150 grams of chopped mushrooms, mix everything together and let them cook for 7 to 10 minutes over medium heat. Keep stirring it from time to time to make sure that the mushroom or the mixture is not sticking. Now take 200 grams of boiled black beans and add it to the mixture, I usually soak the black beans for 5 to 6 hours and then boil them that way they get cooked perfectly.
Then add two teaspoons of salt or salt as per taste, one teaspoon of black pepper, one teaspoon of red chili powder and one tablespoon of cumin powder.
You can choose the spices you like for the stuffing, and mix everything together Now switch off the flame and start mashing the beans and the mixture together since everything is cooked nicely it will be easier for you to mash it.
Once everything is mashed let it rest for 10 minutes.
Now let's start to wrap the cabbage rolls.
So place the leaf on a flatter surface and then add the stuffing depending on the size of the leaf and gently roll it(you can check the video for the reference how to exactly fold the cabbage rolls). Fold it from each side and that's it the size of the leaf doesn't matter as long as it is lengthy and broad enough to hold the stuffing. Just be mindful of the amount of stuffing you're putting on the leaf so it is easy to roll.
Now we will shallow fry them - This step is optional
Add around one tablespoon of oil to the pan and place the cabbage rolls onto it. Let them cook for two minutes and then turn them gently, we are cooking them over medium or high heat so they will cook rather quickly I have baked them and steamed them in the past and they taste delicious both ways if you choose to stir-fry them make sure you roll it in all the directions so they cook evenly from each side.
Once they are evenly cooked from each side switch off the heat and take them off the pan. Serve them hot and enjoy with your family I'm going to eat them with some spicy salsa.
