Mince Vegetable Skewers - Gluten Free

Vegan Seekh Kebabs are a ground/minced vegetable kebabs that are skewered & cooked over a barbecue and can be also done on a flat pan. They are delicious and perfect for Vegans during bbq parties.



Ingredients for Vegan Seekh Kebabs Vegetable mixture Oil – 2 Tablespoon Chickpeas Flour – 2 Tablespoons Onion – 1 Medium Cabbage – 1⁄4 Head Small round radishes – 5-6 Carrot – 1 Medium Green Peas – 4-5 Tablespoons Red chilies – 2-3 In the bowl Boiled Potatoes – 2 Garlic Cloves – 2-3 Coriander Powder – 2 Teaspoons Cumin Powder – 2 Teaspoons Red Chili Powder – 1 Teaspoon Salt – 1-2 Teaspoons or as per taste Mango Powder or Chaat Masala – 1 Tablespoon Chickpeas flour – 2 Tablespoons Dry chickpeas flour for coating Oil for frying

Steps:

  1. Prepare the mixture : To a hot pan, add 2 tablespoons of oil, 2 tablespoons of chickpeas flour, give it a mix. The chickpeas flour is gluten free and it also works as a binding agent. Cook the chickpeas flour for 2-3 minutes over medium heat, you will not be able to see any change in color, but you will be able to smell the cooked aroma of the chickpeas flour.

  2. Add one medium finely chopped onion, and mix them together. Let it cook for 1 minute over medium heat. After that add 1/4th head of finely grated cabbage, then add finely grated radishes.

  3. Then 1 medium finely grated carrot. The reason we are using finely grated vegetables here is because it helps to bind the seekh kebab mixture better, so try to grate them as finely as possible.

  4. Cook them for 2-3 minutes over medium or high heat or till the water is completely evaporated.

  5. After 2-3 minutes, add some boiled green peas, and mix them together by mashing them, with the mixture.

  6. You can always choose the vegetables of your choice to add to the seekh kebabs.

  7. Once the vegetables are almost cooked, add 2-3 finely chopped red chilies. Cook this for another 2 minutes and then switch off the flame.

  8. Let the mixture cool off.

  9. To the mixture add 2 boiled grated potatoes, if you like you can also add some grated tofu along with the potatoes.

  10. Add 2-3 grated garlic cloves, then add the spices, 2 teaspoons of coriander powder, 2 teaspoons of cumin powder, 1 teaspoon of red chili powder, 1-2 teaspoon of salt or salt as per taste, one tablespoon of mango powder or chaat masala, you can substitute it with some lemon as well and give everything a mix.

  11. You can always increase or decrease the quantity of spices you are adding to the mix, when you are mixing everything try to mash them as well.

  12. Combine the seekh kabab mixture with your hands, try to mash everything and combine it well together.

  13. Add some additional chickpeas flour if required to further help with the binding process.

  14. Once the mixture is finally ready,let it reach room temperature

  15. Then add some flour to the board where you are going to roll the kebabs, and spread it evenly and apply it to your hands as well. Roll the kebabs in cylindrical form, you can give it any shape you like, but usually the kebabs are in cylindrical form.

  16. Once all the kebabs are rolled,cook them on a stove top or bake them as well

  17. Brush some oil on the pan and place the seekh kebabs on top, roll it slightly from all the directions

  18. Cook them over medium heat

  19. Serve them with some green chutney
