Cherry Tomato Garlic Noodles : VEGAN & Delicious

Let's prepare the simplest, dreamiest Vegan Cherry Tomato Noodles that are packed with flavors, and made with ingredients you probably already have.
Juicy cherry tomatoes, sizzling garlic, perfectly cooked noodles, and a touch of heat… this recipe is cozy, quick, and downright addictive.

Ingredients:
Pasta type Spaghetti 200-300 Grams
Cherry Tomatoes - 150 grams
Garlic cloves -6
Salt - 1 and a half teaspoons or to taste
Black Pepper Powder - 1 Teaspoon
Olive Oil - 2 Tablespoons
Steps:
1) Bake the cherry tomatoes. If possible, use fresh cherry tomatoes. Slice the cherry tomatoes, giving them a tiny opening.
2) Add all the cherry tomatoes to a baking tray and sprinkle salt, black pepper powder, and olive oil. Mix them well.
3) Bake them at 180 °C for 15-17 minutes in a preheated oven
4) Cook the Pasta. Fill a wide pan with water, add salt, and drizzle olive oil. Once the water comes to a boil, add the pasta. One benefit of using a wide pan is that there is more room for the pasta.
5) Once the pasta is cooked, drain the pasta water and sprinkle it with a little bit of salt and a dash of olive oil. Mix well, as this will help keep the pasta fresh and prevent it from getting sticky.
6) Heat the pan and add olive oil. Add grated garlic and make sure the heat is low. Stir-fry the garlic for 2-3 minutes. You can also use finely chopped garlic for this recipe.
7) The cherry tomatoes are baked and ready; add them to the pan. Mix them well with the garlic while gently mashing them.
8) Add the cooked pasta to the sauce, sprinkle salt to taste, black pepper powder, and oregano, and mix it as well as possible. You can add chili flakes if you like, but I make this for the kids and try to keep this recipe flavorful and spice-free.
9) Now we finish strong—toss in chopped basil or parsley and, if you’re feeling fancy, a sprinkle of vegan parm.
10) The Vegan Cherry Tomatoes Garlic Pasta is ready. It tastes like summer in a bowl—bright, garlicky, flavorful, and ridiculously comforting.
