Vegan Creamy Mashed Potatoes - Foodotomic

Today we are making vegan mashed potatoes, they are so creamy, fluffy, and the ultimate comfort food.


Ingredients for Mashed Potatoes


Medium Potatoes - 5

Salt – 2 Teaspoons


Cashew Cream

Garlic Cloves – 4

Cashews – 100 Grams (3 hours soaked)

Plant Based Milk – 60 ml

Salt – 2 Teaspoons

Olive Oil – 1 Teaspoon

Black Pepper – 1 Teaspoon

Fresh Chives

For the mashed potatoes recipe, you would need the starchy potatoes as they will give you a fluffier interior.


Step 1 - I have taken 5 medium sized potatoes. Wash them thoroughly and remove their skin.



We are cutting the potatoes roughly in 1 inch cubes and that way, they will cook more quickly and evenly.


Step 2 - Add the potatoes to a pan of cold water, if you add them to hot water the outer part of the potatoes will get cooked quickly and they won’t get cooked evenly. Place them on the stove top and add 2 teaspoons of salt, adding salt now to the water will help to build layers of flavors.



Step 3 - After 15-20 minutes check whether the potatoes are cooked, insert a fork and if the fork goes in completely that means the potatoes are done. Drain the water out of the pan and place it back on the stove. Now add the potatoes back to the pan and cook them to dry the excess amount of water. Keep on stirring the potatoes so they don’t stick to the pan and burn. Switch off the heat and let them cool down a bit.


Meanwhile we will prepare the cashew cream for the mashed potatoes.


Step 4 - To a pan add 1 tablespoon of oil, then add 3-4 roughly chopped garlic cloves and cook over low or medium heat for 2-3 minutes. Garlic looks amazing golden brown and its cooked to perfection.





Step 5 - To a blender, add 100 grams of soaked cashews (soaked for 2-3 hours), 50-60 ml of plant based milk, I am going to add it gradually as I blend, and finally the cooked garlic cloves. Blend everything till its smooth.


Step 6 - Now take the boiled potatoes and it’s time to mash them. The best way to mash them is through a ricer, but since I don’t have it I am using this grater.


Step 7 - Once all the potatoes are grated, add around 1-2 teaspoon of salt or salt as per taste. Add 2 tablespoons of cashew cream, we are going to add it gradually as we don’t want to make the potatoes watery. Mix the cream with the mashed potatoes till it’s well absorbed and then add some more and repeat.

I added around 6 tablespoons of cashew cream overall. Add around 1 teaspoon of olive oil, mix everything. Transfer the mashed potatoes to the serving bowl. Smooth it out using a spoon, garnish it using some more olive oil, crushed black pepper and some freshly cut chives. The creamy, delicious mashed potatoes are ready.



They are a perfect side dish, and one of my fav comfort food.

This is one of the easiest recipes you can make at home and trust me you won’t go wrong with it if you follow these steps. Mashed potatoes is a traditional holiday side dish and goes really well with some gravy.
