Today we are making vegan mac & cheese, which is beyond doubt the most ultimate comfort food on the planet.
Ingredients for Vegan Mac & Cheese
Macaroni Pasta – 150 Grams
Salt – 2 Teaspoons
Oil – 1 Teaspoon
Vegan Cheese Sauce
Vegan Butter – 2 Tablespoons
All-purpose flour – 2 Tablespoons
Plant Based Milk – 150 ml
Vegan Cheese – 150 Grams
Salt – 2 teaspoons
Black Pepper – 1 Teaspoon
Nutmeg – 1/3rd Teaspoon
Extra Cheese – 75 Grams
Step 1 - Let’s start by cooking the pasta, as the name suggests we will be using the macaroni pasta. Start by heating water in a pan, once the water starts to boil, add 2 teaspoons of salt, 1 tablespoon of oil and then add around 150 grams of macaroni pasta to the pan. Stir it so the pasta doesn’t stick together. Let the pasta cook.
Step 2 - Meanwhile we will start cooking the vegan cheese sauce for the recipe. To a pan, add 2 tablespoons of vegan butter, the heat should be set at low to let the butter melt. Add 2 tablespoons of all-purpose flour. Give it a mix and then add 150 ml of plant based milk gradually to the pan. Make sure that the ingredients are well combined. You will see it getting dissolved in the milk. Once dissolved, add the rest of the milk to the pan. You will see that the milk will thicken up, then add 150 grams of grated vegan cheese, and mix everything. Cook it over low heat till the cheese melts. You can also try to cover the pan and cook, in order for the cheese to melt faster. Then add 2 teaspoons of salt, 1 teaspoon of black pepper powder and 1/3rd teaspoon of nutmeg. Mix everything. The vegan cheese sauce is ready and at the same time the pasta is also cooked to perfection.
Step 3 - Add the cooked pasta to the pan. Mix pasta with the vegan cheese sauce. I am adding the pasta gradually so I don’t add too much of it, though I ended up adding all the pasta I cooked.
Right now you can stop and serve this as it is since it’s already perfect, but if you want to make this recipe epic there is this one last step you must do.
Step 4 - Transfer the macaroni and cheese to a baking tray, spread it out evenly. Add the remaining cheese on top of it, I have added around 75 grams of cheese.
Step 5 - Bake for 15-20 minutes over 180 C. The vegan mac and cheese is ready.
Look at that the overdose of cheese. It’s a big bowl of happiness right there. Serve it hot and enjoy this ultimate comfort food.
