Easy Vegan Meatballs using Blackbeans | EASY & HEALTHY

Easy Vegan Meatballs that anyone can make quickly. These vegan meatballs are delicious and can be used in different recipes and are healthy too. We are preparing these Vegan meatballs using blackbeans, mushrooms, pecans, oats and some other ingredients. These Vegan meatballs are high in protein and so delicious at the same time. Today we are not just making, not one or two but three different recipes using the vegan meatballs mix.



Ingredients for Vegan Meatballs


Oil – 2 Tablespoons

Onion – 1 Medium

Garlic Cloves – 4

Salt – 1 Teaspoon or as per taste

Oregano – 1 Teaspoon

Black Pepper Powder – Half Teaspoon

Red Chili Flakes – 1 Teaspoon

Mushrooms – 250 Grams

Pecans – 100 Grams

Oats – 100 Grams

Black Beans – 250 Grams


Ingredients for Marinara sauce

Oil – 2 Tablespoons

Onion – 1 Small

Garlic Cloves – 5

Red chili – 1 Medium

Tomato Puree – 300 ml

Salt – 2 Teaspoons

Oregano – 1 Teaspoon

Black Pepper Powder – 1 Teaspoon

Vegan Sugar – 1 Tablespoon

Oregano leaves

Basil leaves

Recipe

Vegan Meatballs

Step 1 - To a pan, add 2 tablespoons of oil.

Step 2 - Then add 1 medium finely chopped onion and let it cook over medium or low heat till it turns translucent( it can take around 7-10 minutes for it to turn golden brown).

Step 3 - Then add 4 cloves of grated garlic and let this cook for 2 minutes over medium heat( Garlic tends to stick to the pan, so keep stirring it in between so it doesn't stick and burn)

Step 4 - Then add 1 teaspoon of salt or salt as per taste, 1 teaspoon of oregano, half teaspoon of black pepper powder, 1 teaspoon of red chili flakes, and mix everything together.

Step 5 - Then add 250 grams of chopped mushrooms, I am using Portobello mushrooms for this recipe but you can use any of your favorite mushrooms. Let the mushrooms cook over medium or low heat till they are completely cooked, you will know as soon as they shrink in size and in between you will see mushrooms releasing water into the pan as well.

Step 6 - Once the mushrooms are cooked completely, switch off the heat and set them aside.

Step 7 - To a blender, add 100 grams of pecans (you can replace them with walnuts too), 100 grams of oats and blend them together. You will get the best results using a food processor, I used a Blender

Step 8 - Add the mushroom mix we prepared earlier to the blender.

Step 9 - Now add 250 grams of boiled black beans to the blender too and blend blend blend!!! You will get a slightly smooth but textured paste out of it.


Shaping the Vegan Meatballs

Step 1 - Start by rubbing some oil to your palms

Step 2 - Then take around 1 tablespoon of the batter, and roll it in between your hands. Roll the mixture till it’s really smooth and round

Step 3 - There is a lot of batter but I am choosing to make just 8 Vegan Meatballs


Baking the Vegan Meatballs

Step 1 -Brush some oil to the baking tray.

Step 2 - Then place the Vegan meatballs to the pan, bake the meatballs for 220 C for over 20 minutes

The vegan meatballs are ready



These are slightly crispy on the outside and so soft from the inside. Ideally you can serve the meatballs with anything but we are going for the classic Marinara sauce.


Marinara Sauce

Step 1 - To the pan add 1-2 tablespoons of oil

Step 2 - Add 1 small finely chopped onion. Let the onion cook over medium or low heat till it turns golden brown

Step 3 - Then add 5 grated garlic cloves and let it cook over medium or low heat.

Step 4 - Add some red chili, I am using 1 medium finely chopped red chili. Give it a mix.

Step 5 - Now it’s time for the tomato puree, I am adding 300 ml of tomato puree, I have added some water and swirled it around in the same bowl and added that to the pan as well.

Step 6 - Let the tomato puree simmer over low heat till you start to see it boil.

Step 7 - Add 1 or 2 teaspoons of salt or salt as per taste, 1 teaspoon of oregano, 1 teaspoon of black pepper powder, 1 teaspoon of vegan sugar. Give everything a mix.

One of my favorite things with marinara sauce is the fresh green leaves we add to it, which adds such great fragrance to the sauce


Step 8 - Add some fresh oregano leaves followed by some fresh basil leaves, and that's it guys the marinara sauce is ready.


Mixing everything together

Step 1 - Add the vegan meatballs to the marinara sauce.

Step 2 - Now gently mix the marinara sauce with the meatballs entirely



There are so many different ways you can eat this recipe with, you can eat it just like that or with some spaghetti or with some rice or even with chapatti.


For the garnish, add some more fresh oregano leaves, doesn't this already look picture perfect, well I can tell you it definitely smells amazing in here.



You don’t always have to serve it with marinara sauce and you can choose your own gravy or eat them just like that as they are perfect on their own as well. And since thanksgiving is round the corner you can even impress your friends by making these amazing vegan meatballs at home and I am sure everyone will love it.
